Food World Supermarket is seeking an experienced and passionate Sous Chef specializing

in Indian mithai, traditional savory snacks & Baking with strong expertise in Indian sweets

and Bakery items, as well as savory snacks production. The ideal candidate has strong

hands-on expertise in preparing a wide variety of Indian sweets, managing bulk

production, and maintaining strict food safety, Kitchen operations, ensuring consistency

in taste, Maintaining high food, safety and hygiene standards in a high-volume retail

Key Responsibilities:

Indian Sweets & Savory Snacks Production & Quality Control

Develop and enhance Indian Snacks and Festive Specialities.

Prepare and oversee production of traditional Indian sweets and snacks.

Standardize recipes, Spice Levels, Portions and presentation of the food. Ensure

proper sugar syrup consistency, khoa preparation, and correct cooking

temperatures.

Maintain consistency in taste, texture, sweetness levels, and presentation.

Analyze customer preferences, introduce fusions, or regional snack varieties to

Menu Development & Festive Planning

Develop seasonal and festive mithai collections (Diwali, Eid, weddings, special

events). Oversee production of the Indian sweets & snacks, namkeen items, fried

snacks, as well as baked goods.

Design promotional gift packs for family snack combos, festive hampers (Diwali,

Eid, Wedding Seasons)

Knowledge of Regional Indian recipes (Gujrati, Punjabi, Rajasthani, South Indian).





Standardize recipes and production processes for cost control.

Introduce cutting-edge fusion mithai options while preserving authenticity

Ensure consistency in taste. Monitor Oil quality and proper frying techniques to

Dough preparation, managing frying techniques, batch production and schedules.

Manage daily back-of-house sweet production operations.

Monitor inventory of key ingredients (milk, khoa, sugar, dry fruits, ghee, flours).

Support ordering, proper storage and Stock Rotation (FIFO)

Handling raw ingredients like flours, lentils, spices, ghee, oils and oils. Control

wastage and maintain food cost targets.

Maintain cleanliness and hygiene in the sweet production area.

Supervise and train sweet makers and kitchen assistants.

Ensure staff follow standard recipes and hygiene protocols.

Coordinate workflow during peak seasons and festive demand.

Support scheduling and performance monitoring.

Compliance & Safety

Ensure adherence to food safety and sanitation regulations.

Monitor shelf life and freshness of milk-based products.

Maintain temperature control and proper storage conditions.

Enforce safe handling of hot sugar syrups and cooking equipment.

Customer Experience

Ensure attractive display of mithai counters. Maintain a visible presence at snack

and sweets counter.

Maintain high standards of packaging and labeling.

Support sampling and promotional activities.

Uphold Food World Supermarket's brand image through quality and presentation.





Qualifications & Requirements

Proven experience as a Sous Chef, Head Sweet Maker, or Senior Halwai specializing

in Indian mithai, Senior Baker, Production supervisor in Indian bakery snacks and

sweets.

Strong knowledge of traditional Indian sweet-making techniques and creative new

methods. Indian snacks preparation, deep frying techniques, and commercial

Experience in bulk production for retail or catering for Indian recipes.

Understanding of food safety standards and hygiene practices.

Ability to work in a fast-paced supermarket or production environment.

Strong leadership. Communication and organizational skills

Culinary and Baking certification is an asset.

Qualifications & Requirements

Proven experience as a Sous Chef, Senior Baker, Head Sweet Maker, or Production Supervisor in Indian bakery, snacks, and traditional mithai.

Robust hands-on expertise in Indian sweet and snack preparation, including deep-frying techniques, commercial baking equipment, and bulk production.

Knowledge of authentic regional Indian recipes such as Gujarati, Punjabi, South Indian, and Rajasthani specialties.

Experience working in high-volume supermarket, retail, or catering production environments.

Good understanding of food safety, sanitation, and hygiene standards.

Strong leadership and organizational skills with the ability to work in a fast-paced kitchen.

Culinary or baking certification is an asset.
