In performing their tasks, they must ensure that: - all food items are maintained at the correct temperatures at all stages of production, up to, and including presentation; - production tools are consistently clean and ready for service; - production equipment is consistently clean and functioning properly; - preparation and cooking activities conform to food handling guidelines; and - all food stations in the area of responsibility are consistently clean.
