Baker – Bread Production | Experienced Baker

Location: Nova Era Bakery – Kitchener, ON

Position: Full-Time / shift starts at 3 AM.

Schedule: Shift Work – Early Morning, Weekends and Holidays as Required

Serving traditional Portuguese baked goods since 1991, Nova Era Bakery is a family-owned Canadian bakery known for authentic Portuguese and European breads, pastries, and café products.

Since opening our first location in Toronto’s Little Portugal, Nova Era has expanded across Ontario while maintaining our commitment to quality, tradition, and freshly baked products.

We are currently looking for an experienced Baker to join our Kitchener bakery team.

Position Overview The Baker is responsible for preparing, baking, and finishing a variety of breads and bakery products while maintaining Nova Era Bakery's standards for quality, consistency, food safety, and presentation.

We are specifically looking for candidates with hands-on bakery experience, particularly with bread production, dough preparation, fermentation/proofing, and oven operations.

This is a hands-on position in a fast-paced bakery environment and requires availability for early morning shifts, weekends, and holidays.

Key Responsibilities

- Prepare and bake a variety of breads and bakery products according to established recipes and production standards.
- Prepare, mix, divide, shape, and handle bread dough.
- Monitor dough fermentation and proofing to achieve consistent product quality.
- Operate bakery equipment and ovens safely and efficiently.
- Monitor baking times,



temperatures, product appearance, texture, and overall quality.
- Prepare bakery products for daily opening and customer demand.
- Ensure products meet Nova Era Bakery's standards for freshness, appearance, taste, and consistency.
- Follow recipes, production procedures, and portion specifications.
- Maintain clean and organized bakery preparation and production areas.
- Clean and sanitize equipment, utensils, trays, work surfaces, and production areas.
- Follow food safety, sanitation, health and safety, and company procedures.
- Monitor ingredients and communicate inventory or production needs to management.
- Support the bakery team during high-volume production periods.
- Perform other bakery-related duties as assigned.

Qualifications & Experience
- Previous professional baking experience is strongly preferred.
- Experience working with bread dough, yeast-raised products, fermentation/proofing, and ovens is highly desirable.
- Previous experience in a commercial bakery, artisan bakery, retail bakery, or similar food production environment is preferred.
- Knowledge of traditional Portuguese or European bread and bakery products is an asset.




- Ability to follow recipes and maintain consistency between batches.
- Strong understanding of bakery preparation and production processes.
- Ability to work efficiently in a fast-paced environment.
- Strong attention to detail and product quality.
- Ability to maintain a clean, organized, and safe workspace.
- Reliable, punctual, and able to work independently and as part of a team.
- Ability to stand for extended periods and perform the physical requirements of a bakery position.
- Must be available to work early morning shifts, weekends, and holidays as required.
- Portuguese language skills are considered an asset but are not required.
