General Description
A Forno Chef specializes in preparing traditional Italian cuisine, with a strong focus on hand‑crafted pizzas, pastas, and managing wood‑fired or stone ovens. They are responsible for making dough from scratch, monitoring oven temperatures, executing recipes flawlessly, and maintaining strict food safety standards in a fast‑paced environment.

Qualifications & Requirements

Minimum 1-3 years of qualified cooking experience in a pizza, Italian, or similar culinary role.

Strong understanding of wood‑fired or commercial stone oven techniques.

Ability to stand for long hours, withstand high‑temperature kitchen environments, and perform repetitive, physically demanding tasks (like stretching dough and lifting heavy flour bags).

Ability to thrive in high‑pressure, fast‑paced environments while staying calm and communicative with the broader kitchen team.

Responsibilities

Operate and monitor wood‑fired or commercial stone ovens, controlling temperatures and cook times to ensure the perfect crust and bake.

Prepare fresh dough, sauces, and toppings,



and assemble pizzas to exact presentation standards. To ensure all mise en place is completed in a timely and efficient manner.

Cook and assemble various Italian dishes, such as pasta, risottos, and appetizers, according to the head chef or restaurant's standards.

Check ingredient freshness and ensure every dish meets flavor and aesthetic expectations before it reaches the customer.
