SUMU is a modern Asian dining destination in the heart of Downtown Vancouver, bringing together the bold flavors of Malatang and the craftsmanship of Japanese cuisine. Our concept features premium sushi, yakitori, Japanese small plates, signature malatang, and handcrafted beverages, creating a unique dining experience unlike any other in the city.

We are currently looking for a skilled and passionate Sushi Chef to join our growing kitchen team.

Responsibilities

- Prepare high-quality sushi, sashimi, nigiri, maki rolls, hand rolls, and other Japanese dishes.
- Maintain consistent food quality, freshness, and presentation.
- Handle seafood preparation and maintain excellent knife skills.
- Manage daily prep work, ingredient inventory, and minimize food waste.
- Follow all food safety and sanitation standards.
- Work efficiently during busy service periods while maintaining consistency.
- Collaborate with the kitchen team and contribute to menu development and seasonal specials.

Qualifications




- Minimum 3 years of professional sushi chef experience.
- Strong knowledge of Japanese cuisine and seafood handling.
- Excellent knife skills and attention to detail.
- Ability to work in a fast-paced, team-oriented environment.
- Food Safe Level 1 certification is an asset.
- Must be legally authorized to work in Canada.
