Job Type: Full-time

Salary: $77,000 per year

We're looking for an Executive Sous Chef who brings a knack for innovation, flavor, and leadership, and supports the Executive Chef in all aspects of menu planning, food preparation, and team management. Key Responsibilities

Direct and coordinate all food and beverage preparation ensuring the highest quality.

Carry out food purchases and maintain proper inventory levels guaranteeing cost controls are in place.

Coordinate frequent workplace inspections and relevant training of all staff, and promptly report any workplace accident or incident.

Maintain records of food costs, consumption, sales, and inventory.

Manage employee performance through training, coaching, evaluation and mentoring.

Ensure that proper safety, hygiene, and sanitation practices are followed.

Coordinate food productions and guest service.

Effectively communicate with department heads in the food services, beverage and related support and operating departments.

Oversee execution of food‑related promotions supporting the casino.

Assist in developing the skills and knowledge of sous chefs and cooks.

Actively enforce food quality, consistency and food safety.

Maintain systems & procedures for ordering,



receiving, storage, preparation & service of food.

Oversee department selection, hiring, training, standards & procedures, evaluating, and scheduling processes.

Continually evaluate and document the performance of all culinary positions, forecasting revenue, associated labor, and operating costs.

What You Bring

Diploma or degree in culinary arts or culinary training and three to five years of related food service management experience or an equivalent combination of education and experience.

Extensive cooking and production experience in a fast‑paced environment.

Excellent leadership and managerial skills and the ability to form and maintain a strong team.

Red Seal certification or equivalent preferred.

Knowledge of Workplace Hazardous Materials Information System (WHMIS), Provincial Health Regulations and sanitation laws.

Understanding of proper use and maintenance of major kitchen equipment.

Excellent communication skills both written and verbal.

Working knowledge of MS Excel, word processing, email and scheduling.

Experience in a unionized environment is an asset.

Provincial certifications for alcohol service and food preparation.

Knowledgeable in safety and fire prevention/evacuation procedures.
