R&D; Technologist – Nova Era Bakery

Work Schedule: Flexible (occasional early mornings, extended hours, and weekends as required to support production trials)

We are seeking an experienced and detail-oriented R&D; Technologist to provide technical support for new product development, recipe optimization, regulatory compliance, process validation, and continuous improvement initiatives within our manufacturing operations.

Key Responsibilities

- Assist the R&D; Manager in developing, optimizing, validating, and implementing bakery and pastry formulations for commercial production.
- Conduct laboratory, pilot-scale, and production trials.
- Prepare, weigh, batch, and mix ingredients according to approved formulations.
- Evaluate dough characteristics and finished product quality throughout the manufacturing process and provide technical recommendations.
- Prepare and maintain technical documentation, including formulations, manufacturing procedures, specifications, and trial reports.
- Prepare and maintain regulatory documentation, including Nutrition Facts Tables, Ingredient Statements, Product Specifications,



and Label Compliance documentation.
- Support the R&D; Manager and Production team during commercialization, process validation, and troubleshooting activities.
- Work closely with Production, Quality Assurance, Purchasing, and Operations to support successful product implementation.
- Support continuous improvement initiatives related to product quality, manufacturing efficiency, and cost optimization.
- Maintain accurate technical records in accordance with GMP, HACCP, company procedures, and Canadian food regulations.
- Maintain confidentiality of proprietary recipes, formulations, technical documentation, and company intellectual property.

Requirements

- Diploma in Food Science, Food Technology, Baking Technology, Pastry Technology, or a related discipline.
- Bachelor's degree in a related field if the education was completed outside Canada.
- Alternatively, a minimum of 7 years of progressive hands-on experience as a Bakery Technologist may be considered equivalent to formal education.
- Experience working in a commercial bakery or pastry manufacturing environment.
- Experience conducting laboratory, pilot-scale, and production trials.
- Experience preparing and maintaining product formulations, manufacturing instructions,



and technical documentation.
- Experience preparing Nutrition Facts Tables, Ingredient Statements, Product Specifications, and Label Compliance documentation.
- Strong understanding of bakery ingredients, dough systems, bakery manufacturing processes, and recipe optimization.
- Knowledge of Canadian food labelling regulations, GMP, HACCP, and Food Safety requirements.
- Experience with bakery fillings and sweet goods development is considered a strong asset.
- Advanced proficiency in Microsoft Excel and Microsoft Word.
- Experience using FlexiBake or similar recipe management software is considered an asset.
- Strong analytical, organizational, and problem-solving skills.
- Exceptional attention to detail and accuracy when recording technical information.
- High level of integrity when documenting technical data, trial results, and manufacturing information.
- Ability to work independently and within a multidisciplinary team.
- Versatile availability to support production trials and commercial product launches when required.
