At Bella Coola Heli Sports, every great day in the mountains starts with exceptional preparation. As First Cook, you'll play a critical role in delivering two essential components of the guest and staff experience: executing our heli lunch program and preparing nourishing staff meals.

This role is ideal for a highly organized, detail-oriented cook who takes pride in consistency, efficiency, and quality. The heli lunch program is one of the most important operational components of the day, requiring precision, careful planning, and an unwavering commitment to food safety. From preparing and packing lunches to coordinating with the daily flight schedule, your work helps ensure guests and the mountain operations team enjoy exceptional meals wherever the day takes them.

Working alongside the Head Chef and culinary team, you'll also lead the preparation of daily staff meals while supporting overall kitchen operations. Life at Bella Coola Heli Sports is collaborative and fast-paced, and we're looking for someone who enjoys working hard, embraces responsibility, and thrives in a remote mountain environment.

Responsibilities:

- Lead the daily preparation, assembly, and execution of the heli lunch program with exceptional attention to detail.
- Prepare high-quality heli lunches, snacks, and specialty food items that reflect Bella Coola Heli Sports' culinary standards.
- Ensure all lunches are accurately packed, labeled, and organized according to guest dietary requirements and daily group assignments.
- Coordinate lunch production with the heli-ski schedule, ensuring all meals are prepared and dispatched on time.

- Maintain the highest standards of food safety, temperature control, storage, and transport for all field meals.

Staff Meal Preparation

- Plan, prepare, and execute nutritious, high-quality staff meals each day.
- Maintain consistency, efficiency, and quality while accommodating staff dietary requirements when possible.

Kitchen Operations

- Assist with food preparation, baking, butchery, and other tasks assigned by the Chef as required.
- Support receiving, organizing, storing, and rotating food inventory within a remote lodge environment.
- Maintain a clean, organized, and efficient workstation while adhering to all food safety and sanitation standards.
- Assist with dishwashing, cleaning, and general kitchen duties to support the overall operation.

Teamwork & Operational Support

- Work closely with the Head Chef, Chef de Partie, and lodge operations team to ensure seamless daily execution.
- Communicate effectively regarding guest counts, dietary requirements, and operational changes.
- Contribute to a positive, professional, and team-oriented kitchen culture.
- Demonstrate flexibility by supporting all areas of the culinary operation as operational needs evolve.

Qualifications:

- Food Safe Level 1 certification.
- Previous experience in a professional kitchen, catering operation, or high-volume food production.
- Strong culinary fundamentals with experience in food preparation, presentation, and productive production.

- Excellent organizational and time management skills with exceptional attention to detail.

- Ability to prioritize multiple tasks and consistently meet tight operational timelines.
- Comfortable working independently while collaborating effectively within a small team.
- Professional, positive, and adaptable attitude.
- Ability to remain calm under pressure and adjust quickly to changing operational priorities.
- Comfortable working long days in a remote lodge environment.
- Must be legally entitled to work in Canada.

Preferred:

- Experience working in luxury hospitality, destination lodges, or heli-ski operations.
- Experience with large-scale lunch production or catering logistics.
- Post-secondary culinary or hospitality education.

Perks:

- Gratuities.
- 4% vacation pay.
- Medical and dental benefits (upon eligibility).
- Staff accommodation and meals provided while on shift.
- Opportunities for staff activities (conditions, operational requirements, and skill level permitting).
- Flexible seasonal schedule with extended time off between winter and summer seasons.
- Career development opportunities within a professional culinary team.
- Work alongside passionate hospitality professionals in one of the world's premier heli-ski destinations.
