Job Summary
As Pastry Sous Chef you will be responsible for maintaining the standards of the hotel and the pastry department, ensuring day‑to‑day operations run smoothly, organizing staff, and upholding quality.
Duties
Department scheduling.
Control departmental inventory in conjunction with Food Stores.
Monitor and control departmental productivity.
Maintain departmental standards as determined by the Executive Chef.
Supervise staff in preparation and presentation of finished products for restaurant and banquet facilities.
Monitor portion control to size, consistency and ingredient standards.
Develop new menu items and stay current with international trends.
Source new products and train culinary team on cutting‑edge techniques.
Ensure kitchen work area is clean, organized and equipment is functional; report malfunctioning equipment.
Maintain liaison with food and beverage outlets, communicating any concerns, comments or suggestions.
Ensure staff adhere to health and safety regulations.
Handle departmental payroll, administration and scheduling.
Create all new food production requirements for the kitchen department.
Order daily food production requirements.
Promote teamwork between kitchen and other departments,
especially food and beverage service employees.
Lead kitchen operation in the absence of the Executive Chef and Executive Sous Chef.
Ensure every employee works effectively, efficiently and improve morale and relations.
Act as a team leader, developing staff, teaching new recipes and procedures.
Encourage staff participation in recycling and Green Committee objectives.
Adhere to Menu Engineering Program.
Conduct employee performance reviews and career counseling.
Perform daily line checks & quality checks.
Host departmental meetings.
Ensure a clean, safe working workplace and participate in health & safety initiatives.
Adhere to all hotel environmental policies and initiatives.
Perform any other tasks as assigned.
Qualifications
Minimum 5 years pastry experience, extensive time in all pastry areas.
Minimum 2 years in a leadership role.
Ability to create chocolate & sugar show pieces.
Valid trade qualifications.
Innovative, detail‑oriented and quality conscious.
Awareness of new trends in presentation and preparation of cold foods.
Empathy for apprenticeship program training sessions.
Flexible scheduling to accommodate business demands.
Self‑motivated, capable of making effective decisions with minimal supervision.
Ability to maintain high service levels under pressure.
Physically fit to lift trays repeatedly; stand and walk for the duration of shift.
