Position Summary

Reporting to the Head Chef and Sous Chefs, the Line Cook is responsible for executing menu items to Penny Crown Tavern's standards while maintaining an organized, clean, and efficient workstation.

Successful candidates understand the importance of urgency without sacrificing quality. They are dependable, coachable, and committed to maintaining the highest standards of food quality, cleanliness, and professionalism throughout every service.

Core Responsibilities

- Maintain a thorough knowledge of Penny Crown's menu, recipes, ingredients, and quality standards.
- Execute dishes consistently with accuracy, speed, and attention to detail.
- Prepare all mise en place before service to ensure station readiness.
- Communicate professionally and effectively with chefs and fellow team members throughout service.
- Maintain cleanliness and organization of all workstations, equipment, and storage areas.
- Assist with daily prep production and overall kitchen organization.
- Continue developing culinary knowledge and technical skills.




- Perform efficiently during high-volume service while maintaining composure and attention to detail.

Primary ResponsibilitiesFood Preparation & Execution

- Prepare and cook all menu items according to standardized recipes and specifications.
- Ensure proper portioning, presentation, and quality on every plate.
- Execute service with urgency while maintaining consistency and precision.
- Monitor food quality throughout service and communicate concerns immediately.

Station Management

- Set up and stock stations before each service.
- Maintain an organized, clean, and fully stocked workstation throughout the shift.
- Communicate inventory shortages and assist with restocking.
- Minimize waste by following recipes and proper food handling procedures.

Teamwork & Communication

- Work collaboratively with the entire Back of House team.
- Communicate clearly and professionally during service.
- Support Front of House through accurate and timely food execution.
- Accept coaching and constructive feedback with professionalism and a willingness to improve.

Facilities & Kitchen Maintenance

- Maintain cleanliness and organization throughout all kitchen areas.
- Properly manage garbage, recycling, compost, and waste disposal.
- Clean and maintain all equipment, tools, and workstations.
- Report equipment issues or maintenance concerns promptly.
- Follow all workplace safety procedures to maintain a safe working environment.

Food Safety & Sanitation

Food safety is a non-negotiable priority at Penny Crown Tavern. Every cook is expected to uphold the highest standards of cleanliness and food handling.

Responsibilities include:

- Monitoring and recording food temperatures.
- Preventing cross-contamination through proper food handling.
- Proper labeling, dating, rotation, and storage of all products.
- Maintaining strict handwashing and personal hygiene standards.
- Understanding allergens and proper handling procedures.
- Following all cleaning and sanitization schedules.
- Wearing appropriate personal protective equipment (PPE) when required.
- Complying with all Alberta Health Services food safety regulations.

Qualifications & ExperienceExperience

- Minimum 4 years of professional cooking experience in high-volume kitchens or catering environments.




- Minimum 5 years of experience in an upper casual or upscale casual restaurant.
- Strong understanding of classical culinary techniques and professional kitchen equipment.
- Basic pastry knowledge is considered an asset.
- Solid knowledge of food safety, sanitation, and food handling procedures.
- Food Handler Certification is required.

Work Environment

Working at Penny Crown Tavern means being part of a fast-paced, energetic kitchen where teamwork is essential.

Applicants should be comfortable with:

- A busy, high-volume kitchen workplace.
- Standing for 8–10 hour shifts.
- Working around hot equipment, open flames, sharp knives, slippery floors, and other kitchen hazards.
- Evening, weekend, and holiday availability.
- Occasional extended shifts based on business needs.

Physical Requirements

This position regularly requires:

- Standing and walking for extended periods.
- Frequent bending, kneeling, reaching, balancing, and lifting.
- Fine motor skills for knife work and food preparation.
- Repetitive hand and arm movements.
- Ability to taste, smell, and visually inspect food to ensure quality.
- Lifting up to 20 lbs regularly and 50 lbs occasionally.
- Manual dexterity to safely operate kitchen equipment and technology.
