Pay Range: The expected annual base salary range for this role is CAD $60,000 - $80,000 DOE
Job Summary: Reporting to the Senior Director of Manufacturing, the Confectionery Specialist is responsible for driving the commercialization of recent chocolate and gummy products from formulation development to scale up and commercial manufacturing. The Confectionery Specialist role is dynamic, fast-paced, multidisciplinary, and collaborative. The successful candidate will independently develop best‑in‑class cannabis confections to support Tilray Brands’ position as a top cannabis company in Canada and internationally.
Role and Responsibilities: Product Development and Optimization: Lead the development of new chocolate and gummy products from prototype to launch‑ready optimized product. Independently develop product formulations, manage sensory and stability studies, and establish relationships with ingredient suppliers to discover best‑in‑class ingredients. Lead product cost optimization initiatives.
Manufacturing Process Development: Lead manufacturing process improvements for existing products and support the development and optimization of new manufacturing processes. Support technology transfers for new products from R&D; to commercial manufacturing by training manufacturing personnel and conducting manufacturing process validations.
QA/QC Support: Create manufacturing process SOPs, manufacturing batch records, product specifications, validation protocols, and stability protocols. Initiate change controls for documentation updates and collaborate with QA in investigations.
New Product Innovation:



Independently and collaboratively develop new product concepts within the cannabis confections domain. Conduct market research to understand the competitive landscape including consumer trends and preferences.
Qualifications 5+ years of experience in a confectionery, chemistry and/or food scientist role
Post secondary education in confectionery, chemistry and/or food science. Relevant experience may be considered in lieu of education requirements.
Experience developing confections including but not limited to chocolates and gummies
Experience working in a commercial food manufacturing plant
Practical knowledge of Good Manufacturing Practices and Canadian food regulations
Demonstrated ability to independently lead product development tasks including product development and optimization, manufacturing process development, product/process troubleshooting, and project management
Demonstrated strong technical writing ability
Comfortable working in a fast‑paced environment with tight deadlines
Enjoys continuous learning, strives to become the subject matter expert for a variety of products/processes, and proactively develops solutions to problems
Familiarity with cannabis science and the Cannabis Regulations desirable but not required
Familiarity with writing product documents for Health Canada
