Job Summary The Lead Cook is responsible for overseeing daily kitchen operations during assigned shifts, ensuring food is prepared to the highest quality standards while maintaining food safety, cleanliness, and operational efficiency. Working closely with the Restaurant Chef, the Lead Cook provides hands-on leadership, supports kitchen staff, and helps deliver an exceptional dining experience for every guest.
Key Responsibilities
- Lead and supervise kitchen operations during assigned shifts, ensuring productive workflow and timely food service.
- Prepare, cook, and plate menu items according to standardized recipes, portion specifications, and presentation standards.
- Support the Restaurant Chef in training, coaching, and mentoring cooks and kitchen support staff.
- Ensure all food is prepared safely and in compliance with Alberta Health Services regulations and company food safety standards.
- Monitor food quality, taste, consistency, and presentation throughout each service.
- Assist with daily prep planning, production schedules, and station setup.
- Ensure kitchen stations are fully stocked, organized, and ready for service.
- Monitor inventory levels and communicate ordering needs to the Restaurant Chef.
- Minimize food waste through proper rotation, storage, portion control, and inventory management.
- Receive and inspect deliveries to ensure quality and accuracy.
- Maintain a clean, organized, and safe kitchen environment, ensuring all equipment is properly maintained and reported if repairs are needed.
- Assist with menu execution, daily features, and special events as required.
- Collaborate with front-of-house staff to ensure timely communication regarding menu items, guest requests, and service flow.
- Step into the Restaurant Chef's role during absences or as delegated.
- Perform opening, closing, and end-of-day kitchen procedures.
- Promote a positive, respectful, and team-oriented work environment.
Qualifications
- Valid Food Handler's Certificate.
- Minimum 2–4 years of culinary experience in a high-volume restaurant, with at least one year in a leadership or senior line cook role.
- Strong cooking skills across multiple stations, including grill, sauté, pantry, and prep.
- Experience in casual upscale or contemporary dining is considered an asset.
- Thorough knowledge of food safety, sanitation, HACCP principles, and Alberta Health Services regulations.
- Experience with inventory management, food rotation, ordering, and waste reduction.
- Strong organizational skills with the ability to prioritize multiple tasks in a fast-paced environment.
- Excellent communication and interpersonal skills.
- Demonstrated leadership, coaching, and team-building abilities.
- Ability to maintain consistency and quality while working under pressure.
- Versatile to work evenings, weekends, holidays, and special events.
- Physically able to stand for extended periods and lift up to 25 kg (55 lbs).
- First Aid Certification is considered an asset.
