Job title: Line Cook/ Prep Cook — Mrs. Riches

Location: Nanaimo, BC

LINE COOK

Reports to: Lead Chef (day-to-day); Kitchen Manager (scheduling, performance)
Supervises: None; may direct dishwashers and prep staff during a service period as assigned by the Lead Chef

Wage range: $19.00–$22.00/hour depending on experience and station

Position summary

The Line Cook prepares and plates menu items to the restaurant's established recipes and specifications during assigned service periods. Mrs. Riches has served homestyle Canadian breakfast, lunch, and dinner since 1985, and the Line Cook is responsible for the consistency guests have come to expect.

Key duties and responsibilities

- Set up, stock, and maintain an assigned station (grill, sauté, fry,) before each service period, including prepping mise en place to par levels set by the Lead Chef.
- Prepare and plate dishes to standardized recipes, portion specifications, and presentation standards; cook to order under volume conditions while maintaining ticket times.
- Read, prioritize, and call back tickets; coordinate timing with other stations so that all items for a table leave the pass together.
- Execute breakfast and weekend brunch service, which carries the restaurant's highest cover volume and requires sustained speed at the griddle and egg stations.
- Prepare items for catering orders produced out of the restaurant kitchen during off-peak hours, as directed by the Lead Chef.
- Follow all FOODSAFE and Island Health food premises requirements: temperature logs, cooling and reheating procedures,



labelling and dating, allergen separation, and cross-contamination controls.
- Maintain station and equipment cleanliness throughout service; complete assigned closing, deep-cleaning, and sanitation duties.
- Receive and rotate stock on a first-in-first-out basis; report shortages, spoilage, and equipment faults to the Lead Chef promptly.
- Control waste and over-portioning in line with food-cost targets set by the Kitchen Manager.
- Support the training of current kitchen staff on station procedures once proficient.
- Perform other kitchen duties as assigned by the Lead Chef or Kitchen Manager.

Qualifications

Required

- One year of recent line-cook experience in a full-service, from-scratch restaurant, or completion of a professional cook training program
- Valid FOODSAFE Level 1 certification, or willingness to obtain within 30 days of hire
- Demonstrated ability to work multiple stations during high-volume service
- Legally entitled to work in Canada
- Reliable attendance for morning, weekend, and statutory-holiday shifts

Working conditions

Standing for shifts of up to ten hours; frequent lifting up to 25 kg; exposure to heat, steam, and slippery surfaces; use of knives and commercial cooking equipment. Non-slip footwear required.
