About Us

D&J; Sausage Factory specializes in European-style deli meats, sausages, and smoked specialties. We're looking for a skilled Butcher/Meat Cutter to join our production team and help us maintain the quality and consistency our customers expect.

Responsibilities

- Cut, trim, and debone pork to specification for sausage production and retail sale
- Select and prepare cuts according to product requirements and recipes
- Operate and maintain cutting equipment (band saws, grinders, slicers, knives)
- Sort and grade meat based on quality, fat content, and intended use
- Weigh, wrap, label, and package products for sale or further processing
- Maintain strict adherence to food safety, sanitation, and OMAFA guidelines
- Inspect meat for quality and freshness, flagging any issues
- Keep accurate records of cuts, yields, and inventory usage
- Maintain a clean, organized, and safe work area, including proper knife and equipment maintenance




- Assist with stock rotation and inventory of raw materials

Requirements

- Minimum 3 years of experience as a butcher or meat cutter
- Strong knife skills and knowledge of various cuts of meat
- Familiarity with food safety standards (OMAFA regulations)
- Ability to safely operate meat processing equipment
- Physical ability to stand for extended periods and lift up to 50 lbs
- Comfortable working in a cold production environment
- Strong attention to detail and commitment to quality and consistency
- Reliable, Productive, Motivated and able to work well as part of a team
