We're looking for a passionate Garde-Manger Cook who takes pride in precision, presentation, and delivering exceptional dishes every service.

Position Summary

As a Garde-Manger Cook, you'll be responsible for preparing and executing the restaurant's cold kitchen offerings with consistency, creativity, and attention to detail. From vibrant salads and composed starters to charcuterie boards and cold preparations, you'll play a key role in delivering beautifully presented dishes that set the tone for our guests' dining experience.

You'll thrive in a fast-paced environment, maintain the highest food safety standards, and work collaboratively with the culinary team to ensure seamless service.

What You'll Do

- Prepare and execute all cold menu items according to Vinny's recipes and quality standards.
- Wash, chop, dice, slice, and prepare fruits, vegetables, herbs, cheeses, and proteins.
- Prepare salads, appetizers, cold sauces, charcuterie boards, terrines, pâtés, and other cold kitchen specialties.
- Assist with selected hot preparations as required during service.
- Follow recipes, portion standards,



and plating specifications with precision.
- Complete daily mise en place to ensure your station is fully prepared before service.
- Maintain an organized, clean, and fully stocked workstation throughout each shift.
- Ensure ingredients are properly labelled, dated, stored, and rotated using FIFO practices.
- Monitor product quality and consistency while minimizing waste.
- Assist with receiving deliveries and organizing inventory.
- Report equipment or maintenance concerns promptly.
- Follow all food safety, sanitation, WHMIS, and Health & Safety procedures.
- Work collaboratively with the culinary and front-of-house teams to deliver an exceptional guest experience.
- Perform opening, closing, and additional duties as assigned.

What We're Looking For

- 1–2 years of experience in a fast-paced, high-volume restaurant kitchen.
- Previous Garde-Manger or pantry experience is considered an asset.
- Experience preparing salads, cold appetizers, and composed plates.
- Strong knife skills and understanding of professional food preparation techniques.
- Culinary diploma or equivalent experience is an asset.
- Knowledge of food safety and sanitation best practices.
- Strong attention to detail and pride in presentation.
- Ability to multitask and remain organized during busy service periods.
- Positive attitude with a team-first mindset.
- Excellent communication and organizational skills.
- Ability to stand for extended periods and lift up to 40 lbs.
