Smokehouse Operator / Sausage Maker — D&J; Sausage Factory (Brantford, ON)

D&J; Sausage Factory, a Brantford-based producer of European-style deli meats and smoked specialties, is looking for an experienced Smokehouse Operator / Sausage Maker to join our production team.

Responsibilities

- Prepare and mix meat blends, seasonings, and cures according to traditional and proprietary recipes
- Operate stuffing, linking, and casing equipment for sausage production
- Load, operate, and monitor smokehouse equipment, controlling temperature, humidity, and smoke levels to meet product specs
- Monitor internal cooking temperatures to ensure food safety and product quality
- Adjust smoking and cooking cycles for different product types (fresh, smoked, cured)
- Perform quality checks on texture, colour, flavour, and yield throughout the process
- Maintain accurate production logs and batch records
- Clean and sanitize smokehouse, stuffing equipment, and work areas per food safety standards
- Follow HACCP, food safety,



and workplace safety procedures at all times
- Train and guide production helpers as needed

Qualifications

- 3 years experience as a sausage maker, smokehouse operator, or in meat processing required
- Strong understanding of curing, smoking, and sausage-making techniques
- Comfortable working in a cold, fast-paced production environment
- Ability to stand for extended periods and lift up to 50 lbs
- Strong attention to detail and commitment to food safety and consistency
- Food Handler Certification required (or willingness to obtain)
- Mechanical aptitude for troubleshooting basic equipment issues an asset
