Detailed Overview

Under the general supervision of the Food Services Supervisor, the Cook/Food Services Worker performs Cook and Food Services Worker duties as assigned. This job will be paid as a Cook when performing Cook duties and as a Food Services Worker when performing Food Services Worker duties. As a Cook, this job prepares assigned food items for daily and inventory requirements by following established menus, recipes, quantity quotas and food production sheets; tests and adjusts food items for palatability; ensures food inventory items are accurately packaged, labeled and stored; assigns tasks and provides orientation to designated staff, as required.

As a Food Services Worker, this job measures and combines food and beverage ingredients by grinding, blending and slicing; prepares and portions out therapeutic meal items for residents by weighing, measuring and combining items; assists with table service and cleans work areas, equipment, pots, pans and utensils.

Responsibilities

Cook Duties:

- Prepares and/or directs the preparation of food and therapeutic diet items such as soups, salads, starches, meats, fish, poultry, vegetables and desserts by roasting, frying, grilling, steaming, poaching, boiling and baking; tests food items for palatability and temperature and adjusts accordingly.
- Plans daily cooking schedule to minimize time between completion of cooking and serving; ensures food items are served according to established standards.
- Prepares,



portions and pans food items to ensure recipe yield meets assigned quantity quotas; carves meat and poultry to ensure recipe yield and appropriate portion sizes.
- Maintains established food rotations in storage to minimize spoilage and waste and ensures leftover food is properly labeled and stored.
- Ensures ready food is packaged, labeled and portioned correctly by checking accuracy of weights and labels.
- Participates in quality improvements activities such as following and providing input into sanitation and safety policies and procedures.
- Assigns tasks and provides orientation to designated staff, as required.
- Performs other related duties as assigned.

Food Service Worker Duties:

- Assists the cook in food preparation such as soups, sauces, starches, meats, fish, poultry, and vegetables; tests item for palatability; takes and records temperatures as per HACCP standards and adjusts accordingly.
- Prepares therapeutic meal items for residents such as sandwiches, salads, milkshakes and special formulas by weighing, measuring and combining items.
- Portions food items per established quantities for each resident at each meal and assists with table service.




- Pans and portions food items as per prescribed methods following established menus, quantities and schedules for each meal.
- Follows established protocols in providing residents with appropriate food consistencies, diet orders, individual food preferences/allergies and supplements.
- Maintains established food rotations in storage to minimize spoilage and waste; completes inventory sheets to ensure appropriate supplies are sent to the cottage setting.
- Checks existing stock of food and supplies against a pre-determined list; completes inventory sheet by indicating number of items required based on established quotas; receives and stores food supplies according to established policies and procedures.
- Cleans work areas, equipment, pots, pans and utensils to ensure proper sanitation levels are maintained; assists with dish pick up, washes and sanitizes dishes and returns dishes to cupboards/drawers.
- Informs supervisor of problems for timely resolution.
- Performs other related duties as assigned.

Qualifications

Education and ExperienceGrade 10 plus one (1) year's recent, related experience or an equivalent combination of education, training and experience. Successful completion of Food Secure Certificate (Level 1). Skills and Abilities
