The salary range for this position is:
Recruitment range: $80,369 to $88,612. Starting salary is determined in accordance with the PEA Collective Agreement.
Performance range: Up to $104,529. Progression beyond the recruitment range is available through annual performance increases, in accordance with the PEA Collective Agreement.

Job Summary
The Executive Sous Chef is a collaborative member of the UNFS leadership team responsible for managing and leading the day-to-day kitchen operations and activities under the Executive Chef and Senior Executive Sous Chef.

The Executive Sous Chef’s primarily focus, and responsibility is ensuring flawless execution with regards to production and catering within the UNFS portfolio. This role is responsible for overseeing and assisting culinary staff in the preparation,



production and execution of meals within residential dining. The position is responsible for Express meal production within a large kitchen and the preparation and execution of flawless catering within the Degrees Catering Division of Food Services while meeting required safety, hygiene and quality standards.

The Executive Sous Chef is responsible for the preparation of high-quality meals in accordance with University Food Services standards, menu specifications, recipes and production schedules as required. The role will work closely with the Executive Chef, Senior Executive Sous Chef and will provide support and leadership in the kitchen operations in their absence. The University of Victoria desires a strong, vibrant food services program to appeal to all members of the university community, including students, faculty, staff and external customers. University Food Services (UNFS) must consistently present its services and staff in a professional manner, setting the example for food services within the Greater Victoria market. The Executive Sous Chef is a key component in this delivery and execution.

Job Requirements
This position requires completion of a certified culinary program, plus a minimum of five (5) years of progressive culinary experience preferably in a collegiate residential and/or high-volume hotel/restaurant environment. Completion of the Red Seal culinary certification program is preferred.

An equivalent combination of education, training, and experience may be considered.

In addition, this position requires:

Proficient in Microsoft Office applications (Word, Outlook, Excel).

Exposure to and understanding of catering ordering systems.

Experience with purchasing, receiving and inventory control.

Demonstrated ability to deliver exceptional customer service.

Excellent culinary skills.

Strong communication (verbal, written, interpersonal)



skills and an ability to communicate effectively with a diverse constituency.

Experience with documenting and enforcing food safety procedures and workplace safety procedures.

Financial understanding in food costs and minimizing wastage in the kitchen is required.

Strong time management, organizational and multi-tasking skills; ability to remain calm in stressful situations.

Works professionally, ethically and with integrity, upholding the vision and mission of UNFS and the University.

Demonstrated leadership, supervisory skills and the ability to inspire a team.

Possesses the capability to make sound, data driven business decisions.

Ability to build and maintain productive working relationships with all stakeholders. Embraces the importance of change and demonstrated experience assisting with change projects and initiatives.

Strong understanding of the value and role of University Food Services.

Ability to help deliver a complete Dining Program to the resident and non-resident campus community.

Ability to work effectively with a diverse population and with all levels of university personnel.

Assets or Preferences

Experience in a unionized environment.

Experience in fine dining or high-end catering.
