About the Role

Le Croissant Bakery is seeking an experienced Red Seal Artisan Bread Baker to join our growing production team. This position is ideal for someone who is passionate about naturally fermented breads and thrives in a high-volume artisan bakery.

Our sourdough program is built on traditional fermentation methods while producing hundreds of loaves each day. We are looking for someone who understands that consistency, efficiency, and craftsmanship can go hand in hand.

Responsibilities

- Produce large volumes of naturally leavened sourdough while maintaining exceptional quality and consistency.
- Mix, ferment, divide, pre-shape, shape, proof, score, and bake artisan breads according to production schedules.
- Maintain healthy sourdough starters and levains.
- Monitor dough development and make adjustments based on temperature, humidity, flour characteristics, and fermentation activity.
- Manage multiple doughs and production timelines simultaneously in a fast-paced environment.
- Operate commercial spiral mixers, hydraulic dividers, moulders, proofers, and deck ovens.
- Maintain accurate scaling, baker's percentages, and recipe consistency.
- Ensure excellent oven spring, crust development, crumb structure, and finished product quality.
- Work efficiently to meet daily wholesale and retail production demands.
- Maintain food safety, sanitation, and workplace safety standards.
- Assist with inventory control and ingredient management.
- Mentor apprentices and junior bakers while contributing to continuous improvement initiatives.

Qualifications

- Red Seal Baker Certification (required).




- Minimum 5 years of professional artisan bread baking experience.
- Demonstrated experience in high-volume artisan bread production.
- Solid knowledge of:
- Naturally fermented sourdough
- Levain maintenance
- Long fermentation processes
- High-hydration doughs
- Baker's percentages
- Dough rheology and gluten development
- Temperature and fermentation management
- Experience working with commercial production equipment.
- Strong organizational and time management skills.
- Ability to work independently with minimal supervision.
- Ability to lift up to 25 kg (55 lbs).
- Comfortable working overnight, early morning, weekends, and holidays as required.
