- Prepare brine solutions according to established recipes and procedures
- Apply curing agents using injection, dry rubbing, immersion, or a combination of methods
- Operate tumbling equipment safely, including setting proper cycles and monitoring pressure
- Monitor curing processes, including temperature, yield, and curing time
- Maintain accurate records of production data, including temperatures, times, and adjustments
- Work closely with cutting, packaging, and quality control teams to meet production targets
- Clean and sanitize equipment, tools, and work areas daily, with scheduled deep cleaning
- Maintain a clean, organized, and safe work environment
Qualifications & Skills
- Knowledge of food safety standards and proper use of PPE
- Ability to follow detailed instructions and recipes accurately
- Strong attention to detail and organizational skills
- Ability to operate equipment safely and efficiently
- Good communication and teamwork skills
- Previous experience in food processing or meat production is an asset (but not required)
Work Environment
- Fast-paced food production facility
- Requires standing for long periods and handling raw meat products
- Must follow strict hygiene and safety protocols
